Ingredients:
4 tarts pastry
4 eggs
100 grams. mushroom puree
100 grams. bechamel
30 oz. grated cheese
2 yolks
Preparation:
Add to bechamel cheese and egg yolks. Plunge the eggs in boiling salted water. Spread the mushroom puree in pies. Have a poached egg on top of each tart and top with mornay sauce (bechamel with cheese and egg yolks). Grill and serve.
